yup we had em Dom, loved by everyone, including Mr D who didn't even realise he hadn't had any meat for his tea Shocked

I'm wondering if I'v e made enough courgette cakes, there are 8 in the freezer Shocked

that courgette cake of Del's is really lovely Tara - dead moist cos you use quite a bit of oil. I made a frosting for mine with chopped hazlenuts. Lovely. Quite a big cake anorl so plenty to go round. Is it me but I prefer the corners Very Happy

I used yellow unpeeled yellow courgettes the first time but the second time was unpeeled green uns. You can still see the green bits though which is no good if you're attemtping subterfuge Very Happy

I made the famous Jaggy fritters last night but I buggered 'em up Embarassed
they tasted nice enough and got scoffed in seconds by the family (even Dave who hates courgettes and knew they were in there Shocked )
but they were really soft for fritters, they collapsed and certainly couldn't be 'dunked'.

we had ours with a home made chinese 'aimee' dipping sauce. twas DEEEEEELLLLLLLISH! Very Happy

but what did I do wrong wiv me fritters?
(Dave thought it was hilarious by the way that I buggered up dinner Rolling Eyes )

courgette and onion relish
1kg courgettes
1kg onions
125ml rapeseed oil
3 red chillis
3 cloves garlic
125ml dry sherry
100ml white wine vinegar
salt & pepper
3 tbsp sugar

finely chop onions and courgettes and sweat in rapeseed oil for 10 mins
chop chillis into very fine rings (keep seeds in if you like very hot relish)
fine chop garlic and add these along all the other ingredients to to the courgettes and continue to sweat for 20 minutes.

fill steralised jars and seal immediately.
should make about 6 x 250ml jars.
