Absolutely lovely this.... Courgette and basil soup... One of my students recommended it and I made it tonight YUM Very Happy
Make your soup as normal, courgettes sauteed in butter, add a bit of flour as you're doing that..., cooked in stock. When you liquidise it, add a large handful of basil leaves. And cream at the end. Mmmmm

I made courgette fritters the other day and they are finger lickin good Very Happy

Today I made the recipe which gets rid of loads of courgettes in one go (which has to be a good thing) The one where you cook loads of thinly sliced courgettes in a big frying pan with a goodly amount of olive oil in the bottom. You fry into that 2 or 3 anchovy fillets til they disappear then add your tonnes of courgettes. Three crushed cloves of garlic are added and you cook the whole lot down on a very low heat. It thickens up and goes saucy so then you add about 50 g of parmesan cheese and then put the pasta on. By the time the pasta is cooked the courgettes in the oil have reduced to gloop. Strain the pasta and add the gloopy courgettes to the pasta and gently stir to combine and add loads of fresh basil and freshly ground black pepper

I added the gloopy courgettes but separated it from the oil slick left in the pan as I used too much oil Rolling Eyes

Have just read through this thread in a vain hope of finding the courgette and feta fritter recipe coz the girls have requested them for tea Shocked

I just love how we manage to create a sticky courgette thread and end up discussing porn...........oops sorry Very Happy Very Happy Very Happy Very Happy and now I've only got 5 smilies.......and no wibbling one and no blushing one, I just cna't cope Shocked Shocked Shocked ..thank heavens for the shocked smilie Shocked Shocked Shocked Shocked

last night I made Lillys oriental courgette recipe and it's been marinating overnight in the fridge Very Happy

We're off to the chinese cash and carry today just to stock up on sesame oil and soya sauce Laughing Laughing Laughing Laughing

so thanks Lill, that recipe is going in my 'absolutely favourite family recipes' book (which is dead posh cos it's for my girls to have when I snuff it) Laughing

well, the family are having spag bol so I thought I'd do meself that courgette pasta thingy of Wardy's

anyway, it's been cooking for a while now and is the colour and consistency of snot Razz
so, before I shove this gloop onto my pasta....has anyone actually tasted this stuff?
is it nicer than it looks? Confused

I hid it under a layer of mozerella and cheddar and stuck it under the grill Cool

tasty alright if a bit bland

mine wont bland, it was full of parmesan and garlic so anything but Very Happy it will have had basil on it or flat leaf parsley too
