Another use for courgettes, spuds, cauli, spinach etc. Owt you fancy really Very Happy

2 medium onins, thinly sliced
2 chopped green chillies
2 tbs fresh coriander chopped
1 cup Besan (gram) flour
2 tsp salt
1 tsp turmeric powder
2 tsp cumin powder
2 tsp ground coriander
3 garlic cloves finely chopped
1 small bunch of fresh spinach chopped
1 potato grated (or courgette etc)
1/4 of a cauli, chopped into small florets
1/2" of ginger, sliced
Clean oil for deep frying

Prep veg as above, sift Besan into a bowl and add ingredients and mix to combine. Gradually add half a cup of water - carefully - as the mixture must not be too wet! Mix for 3 minutes to ensure a good mix which should be a thick dropping consistency. Heat oil in wok or karahi (or chip pan for you commoners) and when hot enough add a tablespoon full of the mixture carefully one at a time til you have no more than 5 pakora in the oil. Keep heat on medium as you don't want your pakoras to burn! After a minute or so turn em over with a palette knife. They take approx 7 mins to cook. Using fish slice turn them out onto kitchen paper and serve hot with green or sweet and sour chutney

They are Very Happy I substituted calabrese for cauli and added grated courgette (squeezed out) oh and I had no spinach so added more coriander. Handy when you have just the odd veggie to hand rather than loads of one thing. Finely grated carrot would work fine too Very Happy

Nah, just one of those Patak's sauces. Stuck it on some courgette cubes and pasta (!) which was leftover from lunch then nuked it all. Made an interesting instant meal.

Hey MB did you know about the flour place at Wingerworth? Went yesters for me gram. Came out with 8 seed mix flour and some golden pastry flour (added maize to make it yellow as used by M & S). It's on Edinburgh Road or Croft Question off Chartwell Ave, in a parade of shops. It's in a shop called Fruitara or similar - bakers, deli and fruit n veg Very Happy
