This is a seriously weird recipe.....but a good one Very Happy
Me and Dave have been scoffing these all evening! They are crispy on the edges and chewy in the middle like american cookies only much simpler with no weighing and no flour.

1 cup peanut butter
1 cup sugar
1 egg
1 t-spoon bicarb

combine, leave for 5 mins, roll into balls, bake for 10 minutes on gas mark four, scoff like a greedy pig Cool

either and when I didn't have quite enough I made up the difference with some nutella chocolate spread Laughing

nope....they spread out by themselves Very Happy

if you make the dough into about 20 balls, they flatten themselves out to a good, generous size.
when you first mix it up it looks really wet and gooey but when you leave it for a few minutes it magically turns into thick, rollable dough Shocked

Heh. Won't be doing these as can't eat peanuts. Have had awful tummyache for a couple of weeks, would have helped if I'd not eaten some Indian dishes with cashew puree in... argh.

HOWEVER

Once upon a time when I still dared eat *some* nuts, I came across an amazing recipe as part of a mass emailing which I just found my printout of (on proper stripey holed computer paper, dated 13th January 1992). It came with a story, since debunked as an urban legend, but the cookies are still nice. And they work without the nuts too.
