Cannelloni tubes (3-4 per person Shocked – 2 is usually enough for me!)
Jar of your favourite tomato mix – I favour Bertolli's mixes!
1 pint white sauce

Filling 1
1 onion diced
3 small courgettes (diced)
100g grated cheese
s & p

Filling 2
250 g. riccotta
250 g cooked spinach
pinenuts (optional
nutmeg to taste Very Happy
s & p

1)
In a fry pan cook onion in 2 tbsp olive oil with courgettes 5-6 mins
Remove from heat stir in grated cheese, salt & pepper

Cook vast quantity of spinach !! Strain and aqueeze out moisture!
Mix with tub of ricotta, chuck in pinenuts (if you like them).
Add s & p and good sprinkle of nutmeg.

You now have two types filling.
Stuff tubes.

In large rectangular dish spread tomato sauce across the base
Lay on the tubes, side by side, till sih full.
Cover with the white sauce.
Sprinkle more grated cheese or permesan on top of sauce.
Cover with foil.

Bake 300 deg for 30 mins, remove foil for last 5 mins.

better if you make your own pasta, another nice recipe though and will have to try filling 1 for a refreshing change.
