Couscous with roasted peppers, tomatoes and mint

2 small peppers, 1 yellow, 1 red
cherry toms
8 oz couscous
1/2 pt veg stock (or water)
1 tin kidney beans
fresh mint

Roast veg in oven for 1/2 hr thrn chop. Cover couscous with boiling water and leave for 5 min. Fluff up Very Happy
Mix the lot Cool

Spicy chickpeas with toms and courgettes

1 onion
2 garlic
small piece of ginger
1 chilli
1 tsp ground coriander
1 tsp ground cumin
1/4 tsp turmeric
1 tin chopped toms - or fresh when you have some Very Happy
2 tins chickpeas
2 courgettes
4 oz green beans
coriander leaves

Cook onion with spices until softened. Add veg. Simmer for 10 min. Serve with rice Very Happy

Very Happy ooh and do you know Salade ni็oise?

Boil some new potatoes and green beans.
Err.... when cold, mix with salad leaves, onion rings, toms, tuna chunks (leave out if you don't eat fish either Confused ) and hard boiled eggs cut in half.

Goes with French dressing : 1 tblsp vinegar with 4 tblsp oil plus salt, pepper and small dollop of mustard, chopped shallots if you have some...[/code]

This is a really quick easy one Tara Very Happy

Tomato gnocchi gratin

2 x 400g cans chopped tomatoes
2 tbsp olive oil
2 crushed garlic cloves
2 tbsp chopped basil
Half tsp caster sugar
salt and black pepper
1 x 400g packet of gnocchi
6 tbsp creme fraiche
25g mature cheddar (grated)

Put tomatoes, oil, garlic, basil, sugar and seasoning in a pan, bring to boil, cover and simmer for 20 mins. Cook gnocchi according to instructions on packet, drain well and put in oiled gratin dish. Pour the tomato sauce over the gnocchi, add dollops of creme fraiche and top with grated cheese. Grill for 4-5 mins till bubbling.

Goes well with garlic bread.

one of those links from Ade has a gorgeous recipe for 'Thai broccoli soup' with lemon grass, ginger, chilli and coconut. And that's what I'll be having for me tea tomorrow Laughing

soooo, can I be cheeky Ade and ask for your own recipe for beanburgers Embarassed I'm allergic to quorn and it seems to be in so many products I figure I'd best make me own Rolling Eyes
could you start the instructions with when to harvest the beans, how to dry them, which are the tastiest you've tried etc please? Embarassed

Just pick the biggest stringiest pods you have. If using fresh pod the beans and cook them for about 10 mins (if not, dry the pods then extract the beans and cook as you would for dried beans) . Mash them and mix in some onions and garlic (and chilli and/or curry spices) that has been saut้ed until soft in in a fair amount of butter or oil. Sprinkle in a stock cube and mix until thoroughly combined. Shape into patties and chill in the fridge for a while. Fry over a medium flame until brown, then eat. I don't like commercial bean burgers but do like my 'throw loads of ingredients' together ones.

I'm sat here scoffing a bowl of thai pepper and mushroom soup (was gonna do the broccoli one but got a carrier bag of peppers for a quid down the market Wink ) and it is delish Very Happy

We used to get this magazine and there were always good recipes in it. Newer recipes are available online but not the Swedish Bulgar Wheat balls that I used to make and serve with Hasselback potatoes. Luckily, just found the recipe for those online:

Ingredients
• 1 Cup Bulgur
• 3 Cups Cold Water
• 1 Small Onion -- Finely Chopped
• 2 Tablespoons Red Miso
• 1/4 Cup Milk
• 1 Cube Vegetable Bouillon -- Crumbled
• 1 Medium Potato -- Cooked And Mashed
• 3 Tablespoons Bread Crumbs
• 1 Medium Egg
• 1/4 Teaspoon Pepper
• 1 Pinch Nutmeg
• 1 Tablespoon Parsley -- Finely Chopped
• 1 Tablespoon Butter
• 1 Tablespoon Olive Oil
Directions
Combine bulgur and water. Set aside for 30 minutes. Drain, squeeze out water and transfer to large mixing bowl. Saute onion in oil until well browned. Remove from heat, add miso and milk, Stir well and add bouillon. Add remaining ingredients to bulgur including onion mixture. Shape into balls about 2 inches in diameter. Chill one hour. Saute balls until browned on all sides. Transfer to baking dish and bake for 15 minutes in 300 degree oven.

When I made them, I omitted the milk.
