I really feel this one deserves it's own thread! Very Happy It's brilliant Razz
... made it last night, used yellow plums not toms, 2 tsps of chilli flakes (from the pepper mill!!) and the cooking time to get it dark and rich and juice evaporated took 4+ hours. All veg off the lottie Cool

Do try it Very Happy

Glutney Chutney - River Cottage - HFW

Ingredients:
1 kg marrow, pumpkin or overgrown courgettes … diced 1cm … (discard big seeds)
1 kg tomatoes (or plums) diced and skinned & chopped discard seeds (stone plums)
1 kg cooking apples
½ kg onions chopped
½ kg sultanas or raisins
½ kg soft brown sugar
750ml cider vinegar – made up to 1ltr with water
1-3 tsp chilli flakes

For the Spice bag:

thumb sized nugget fresh ginger.
12 cloves
12 black peppercorns.
1tsp coriander seeds
few blades mace


Heat mixture gently, stirring occasionally to dissolve sugar, and bring slowly to the boil

Simmer 2-3 hours, [think again !!] uncovered, stirring regularly to ensure it does not burn on the bottom of the pan

The chutney is ready when it is rich, thick and reduced, and parts to reveal the base of the pan when a wooden spoon is dragged through it.

If it starts to dry out before this, add a little boiling water

Pot up and leave to mature for at least 2 weeks – preferably 2 months!

that sounds delish Shocked I got loadsa whopping courgettes so must get busy. Never seen blade mace in the shop though Confused

I treated myself to some swanky preserve jars too so got to get filling em Very Happy

My pepper mill bust t'other day and I bought a new one, well two cos there was a BOGOF on so good idea about putting chilli flakes in. Never thoughta that, dunderhead that I am Very Happy

Couldn't find my blade mace either, so used 1 tsp ground mace Very Happy

I'm going down the chinese cash and carry later, they sell great bags of spices there so I'll have a look Very Happy
If they do sell it I'll post us all some so we have it ready at glut time (especially Dom who is likely to be buried under courgettes by then Laughing )

I got the blade mace Flo but Tesco Rolling Eyes had no chilli flakes Evil or Very Mad

Should I use a fresh red chilli do yer think or some dried chilli powder, say a teaspoon full Question Confused I have both of those in store Very Happy Can't wait to get going with it. Got some lovely jars Very Happy

Think I would go with the chili powder, teaspoon at a time ... add and taste each time !! Wink it's an easy way to get the 'heat' to your requirement! Very Happy

I kept a few of my lottie chilis from last year and they dried out beautifully, just the job!!

After all this rain think I will be making another batch too !!!! Rolling Eyes Laughing
It cooks down really well, to a lovely rich dark shiney colour, I have never evaporated out so much moisture before, followed the method to the letter, and have to say it tastes yum!

My batch gave me 6 of those tall Bertoli jars full Cool

I cocked this up Shocked I copied Hugh's recipe off the internet. Why, when it was on here I ask myself Rolling Eyes Anyway it says on the recipe, 750 ml white wine, or cider vinegar. So I did just that and put white wine in it. I now realise it means white wine vinegar Embarassed Not very clear though Sad

Can I salvage the situation by adding cider vinegar to top it up as it evaporates or will be a crock of wotsit, and will it keep Question

Anyone Question

Double everything up, add a strong spirit vinegar instead of white wine or cider vinegar when you double it and then boil it down. If the spirit vinegar is twice the strength of the wine/cider vinegars are, then it'll be just as acidic as if you did it right in the first place.

just found a load of overgrown courgettes at the plot and we've got a freezer ful of courgette cake so I needed an alternative to use them up....................thanks Flo Laughing

Have just been plum picking so am going to have another go ...

Have come to the conclusion that HFW must boil not simmer his chutney ... no way does it evaporate to desired consitency in 2 - hours !!!!

2nd batch now made! Very Happy

Didn't use the water, plums were very juicey ...kept the heat a little higher, and made 6 jars as before Razz

... but it's a wee bit paler than the first batch which is a shame!
