I really feel this one deserves it's own thread!  It's brilliant
... made it last night, used yellow plums not toms, 2 tsps of chilli flakes (from the pepper mill!!) and the cooking time to get it dark and rich and juice evaporated took 4+ hours. All veg off the lottie
Do try it
Glutney Chutney - River Cottage - HFW
Ingredients:
1 kg marrow, pumpkin or overgrown courgettes … diced 1cm … (discard big seeds)
1 kg tomatoes (or plums) diced and skinned & chopped discard seeds (stone plums)
1 kg cooking apples
½ kg onions chopped
½ kg sultanas or raisins
½ kg soft brown sugar
750ml cider vinegar – made up to 1ltr with water
1-3 tsp chilli flakes
For the Spice bag:
thumb sized nugget fresh ginger.
12 cloves
12 black peppercorns.
1tsp coriander seeds
few blades mace
Heat mixture gently, stirring occasionally to dissolve sugar, and bring slowly to the boil
Simmer 2-3 hours, [think again !!] uncovered, stirring regularly to ensure it does not burn on the bottom of the pan
The chutney is ready when it is rich, thick and reduced, and parts to reveal the base of the pan when a wooden spoon is dragged through it.
If it starts to dry out before this, add a little boiling water
Pot up and leave to mature for at least 2 weeks – preferably 2 months!

that sounds delish  I got loadsa whopping courgettes so must get busy. Never seen blade mace in the shop though
I treated myself to some swanky preserve jars too so got to get filling em
My pepper mill bust t'other day and I bought a new one, well two cos there was a BOGOF on so good idea about putting chilli flakes in. Never thoughta that, dunderhead that I am  |

Think I would go with the chili powder, teaspoon at a time ... add and taste each time !!  it's an easy way to get the 'heat' to your requirement!
I kept a few of my lottie chilis from last year and they dried out beautifully, just the job!!
After all this rain think I will be making another batch too !!!!
It cooks down really well, to a lovely rich dark shiney colour, I have never evaporated out so much moisture before, followed the method to the letter, and have to say it tastes yum!
My batch gave me 6 of those tall Bertoli jars full  _________________ Gulp ...

Double everything up, add a strong spirit vinegar instead of white wine or cider vinegar when you double it and then boil it down. If the spirit vinegar is twice the strength of the wine/cider vinegars are, then it'll be just as acidic as if you did it right in the first place. _________________

Have just been plum picking so am going to have another go ...
Have come to the conclusion that HFW must boil not simmer his chutney ... no way does it evaporate to desired consitency in 2 - hours !!!! _________________ Gulp ...

Hey Flo, how many jars did you get. I used jam jars and only got 5. Not the 10 he suggested. |

2nd batch now made!
Didn't use the water, plums were very juicey ...kept the heat a little higher, and made 6 jars as before
... but it's a wee bit paler than the first batch which is a shame! _________________ Gulp ...
