Made these today. Dead pleased with them. I think there's one left. No need to fess up to courgettes Very Happy Again I used the yellow ones and told my son it was lemon zest Cool

190 g all-purpose flour
150 g sugar
5 g baking soda
2 g ground cinnamon
3 g salt
1 egg, lightly beaten
120 ml vegetable oil
60 ml milk
15 ml lemon juice
5 ml vanilla extract
125 g shredded zucchini
50 g miniature semisweet chocolate chips
30 g chopped walnuts

DIRECTIONS
In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until muffins test done.

I quite like the sound of them. Maybe next yeat when I have grown some yellow courgettes Confused Wards, I think you should make a batch and send us all some as samples Laughing Laughing
