Don't know if you like to do 'ping' puddings but this is so easy for a quick pud.

CITRUS PUDDING
1 small egg
1 tbsp caster sugar
2 tbsps plain flour
1 tsp baking powder
1 heaped tsp honey
zest of half lemon

1. Mix together the beaten egg, caster sugar, flour and baking powder.

2. Lightly grease 2 microwave-safe moulds or cups. Add some honey to the bottom of each mould and spoon the mixture on top.

3. Cook on high power in the microwave for 1.5 - 2mins. Allow to stand for 1 minute, then turn out on to a plate and drizzle with the lemon zest - enjoy. For a ping pud it is quite nice and quick.

Microwave puddings are the best. When you fancy something sweet but have nothing in bung it in the microwave and you have it in a few minutes Very Happy
