7 Large elderflower heads. Pick on a sunny day when the scent is at it's headiest.
2 lemons.
566gms (1¼ lbs) of sugar. Granulated.
2 tablespoons white wine vinegar.
4.546 litres (1 gallon ) boiling water.

Place sugar into a plastic bucket and pour on the boiling water stir and allow to sugar to completely dissolve. When the liquid is cold add flower heads, white wine vinegar and sliced lemons. Stir well and leave for 24 hours. After 24 hours strain through muslin and bottle. Make sure you use plastic fizzy pop bottles and let out some of the gas if you see the bottom of the bottle distort with the pressure. Check for this daily. This is an extra fizzy drink . This drink does not keep for long but it is very refreshing on a hot summers day.

there's hardly any alcohol in the champagne Laughing

you only get real alcohol in the wine...but that requires demijons and airlocks and what not Confused
